Exhaust hood for the kitchen: arrangement of ventilation structures

The kitchens of each HoReCa establishment (hotel and restaurant business) are necessarily equipped with a high-quality ventilation system, which guarantees the rapid removal of waste air masses, as well as smoke and grease, to the outside. Not only the functioning of the kitchen and the taste of food, but also the ability to prevent unpleasant odors from penetrating into the hall to visitors depends on the correct operation of this system. One of the main elements of the ventilation system in the kitchen is the hood. Exhaust hoods are equipped with grease traps, allowing you to quickly remove all fumes, as well as protecting the air ducts from plaque.

Grease traps

Grease traps are considered one of the most important components of a kitchen hood system. They are a kind of barrier between the stove and the air duct, allowing air to pass into the system, but preventing burning and grease particles from entering. This allows you to extend the service life of the ventilation system, and also eliminate the need for constant cleaning, since up to a liter of grease can accumulate on the walls of the air ducts over the course of a year. According to their purpose, there are two types of grease traps:

  • household;
  • industrial.

Let's look at each type in more detail.

Household grease traps

A household grease trap is used in home kitchens and is installed above the stove. Its operation helps prevent frequent cleaning of the exhaust hood. Of course, the home hood element is not as functional and effective as its counterpart in the kitchens of canteens, restaurants and cafes, but its performance characteristics are quite sufficient for private use. It also differs from a professional product:

  • size;
  • material.

The dimensions of household grease traps are smaller than industrial ones. As for the material, they are equipped with a fabric or paper mesh. On the one hand, such a filter cannot be washed, on the other hand, it is quite cheap and can be replaced, if necessary, with a new component. Some models are equipped with a metal mesh that can be easily cleaned by immersing it in a container of detergent.

Industrial grease traps

Grease traps for public kitchens are professional products installed in galvanized or stainless steel exhaust hoods. Such filters cannot be made with your own hands, but you can buy them in Moscow at an affordable price in our online store. Their use is mandatory, since public kitchens are filled with waste gases that must be quickly removed through the air duct. In this case, fat particles can clog it; to prevent clogging, a grease trap is installed. Such elements can be manufactured in:

  • three-layer version;
  • five-layer design.

The first type is characterized by a thickness of 20 millimeters, the second - 25 mm. The material for industrial grease traps is also stainless steel or zinc coated steel. This material is protected from the effects of gases, aggressive detergents and the harmful effects of moisture.

Stainless steel exhaust hoods

Hanging hood hoods can differ in both configuration (wall-mounted, island-mounted) and material. Most often, stainless steel is used to manufacture this element of the ventilation system, which has the following advantages:

  • strength;
  • long service life;
  • protection against gases and aggressive chemicals;
  • protection against corrosion development.

The last point is the main advantage of stainless steel. It is the protection against the harmful effects of moisture, which causes metal corrosion, that can significantly extend the life of the hood. Another important element that influences the correct operation of the system is the grease trap. You can read about its advantages and types above.

In our company you can buy high-quality stainless steel umbrellas, as well as order the production of parts according to original measurements. Here you will find:

  • symmetrical products and offset models;
  • single-sided umbrellas;
  • options with and without flange.

We offer both classic options for closed kitchens, as well as umbrellas for barbecues (grills) and tandoor. With our hoods you can quickly get rid of unpleasant odors in the kitchen and also protect the chimney from clogging.

How to choose a suitable pipe umbrella

The choice of design is influenced by two factors: the shape of the chimney and the type of boiler installation.

The first point is clear: the shape of the umbrella is always identical to the cross-section of the pipe. If the chimney is made of a standard round pipe, then the base of the cap should also be round, and its upper part should be made in the form of a cone or a regular flat circle.

As for the type of boiler room, the properties of the fuel burned play an important role here. When gas is burned, a large amount of water vapor is formed, which, when in contact with the protective umbrella, condenses and forms ice. Therefore, when heating a house with gas, the only possible head option is a nozzle with a hole in the upper part.

Note! The installation of weather vanes, chimneys, deflectors and umbrellas on the chimney of a gas-using unit is prohibited by Russian SNiPs. This is due to the fact that in the event of ice formation, a significant part of the pipe opening is blocked and the movement of the wind vanes is stopped. As a result, smoke enters living spaces, which is fraught with fumes.

In a boiler room with a solid fuel installation, the smoke temperature at the outlet reaches 250 degrees, and much less moisture is formed than when operating a gas burner. Therefore, the use of protective umbrellas of any type is permitted.

Features of exhaust hoods

The main differences between hood hoods are the features of their placement. It is customary to distinguish two fundamental types of umbrellas:

  • wall;
  • island.

The first option is used in kitchens where the stove is installed near the wall. In this case, the hood is also attached to the wall and connected to the air duct above it. Wall umbrellas can be in a classic configuration or made for barbecues. The second type is equipped with spark-extinguishing filters and is also manufactured with elongated walls.

Island umbrellas are installed in kitchens where the stoves are located in the middle of the room. This product is attached to the ceiling, connecting to an air duct of an adjacent diameter.

When choosing an umbrella, it is important to determine not only its power, but also its size. It is important to choose the optimal power of the fan motor installed in the air duct, since weak ones will not suck in exhaust air quickly enough. At the same time, those that are too powerful will waste energy, running up large bills for electricity consumption. The working area of the umbrella should completely cover the stove, collecting all the steam and splashes from the stove. It is also important to determine the optimal installation height. It should not be located too low, causing inconvenience during the cooking process, but placing it high will not give the necessary result in terms of hood efficiency. As mentioned above, the best material for umbrellas is stainless and galvanized steel, whose protection indicators allow the products to be used in high humidity.

How to make an umbrella with your own hands

The variety of shapes and types of protective umbrellas makes it possible to choose the best option for any chimney. But after spending a little time, you can make and install the device yourself and thereby protect the smoke duct, as well as increase the efficiency of the heating unit.

dimensions

For example, to make a simple protective device in the form of a conical mushroom:

  • First, it is recommended to make a cardboard model that matches the shape and size of the original. The template for the cap is made in the form of a circle with a radius of 1.7d/2, where d is the diameter of your pipe. You can get a cone from this part by cutting out an angle of 30°. In this case, you need to leave 20 mm overlaps for subsequent fastening. The resulting model is copied onto a metal sheet, and then the workpiece is cut out with metal scissors.
  • The edges of the part are connected using rivets, thus obtaining a finished cone.
  • The umbrella brackets are cut out in the form of 3 strips measuring 200x40 mm. To increase their rigidity, sides with a width of 10 mm are made along the edges.
  • It is preferable to fasten the brackets to the cone using rivets.

Grease cassettes

Cassette grease filters are one of the types of grease traps that are in high demand when using exhaust hoods. The products are mounted inside the hood directly above the stove. Their mesh design allows air to pass freely inside the ventilation system, while particles of fat settle on the filter and do not pollute the air duct.

The design of the cassette is quite simple, it consists of:

  • frames - most often stainless steel or galvanized metal is used;
  • mesh filter.

Household filter meshes can be made of paper or fabric, while products for restaurants, cafes and canteens are equipped with a metal mesh. In this case, galvanized steel or stainless steel is also used. The advantages of metal cassettes are that they can be reused. If fabric filters have to be constantly changed, then metal grease cassettes can be cleaned. To do this, just place them in a container with water and detergents. The advantage of stainless steel is its immunity to aggressive chemicals and water.

Nuances of self-installation

Step-by-step installation of an exhaust hood and connection to the air duct
Installation of an exhaust dome is done in several ways. Which one to choose depends on the equipment model.

  • Installation on wall anchors. To do this, drill 2-3 holes at equal distances in the back wall of the dome and fix the device to the wall. In this case, the panel must be perfectly flat. If the umbrella has a large canopy reach (more than 1 m), you can additionally attach it to the ceiling.
  • Mounting on cables and chains. To do this, you need to weld brackets to the top of the dome in 3 or 4 places, depending on the shape of the umbrella. The brackets are also mounted in the ceiling. The dome is suspended on cables or chains to the desired height. This installation method is shaky. The dome remains moderately mobile.
  • Mounting on studs and collets. This method can be used to install island and wall-mounted models. This method is suitable for rooms with a ceiling height of no more than 4.35 m due to the standard stud length of 2 m. To install the dome at four points along the edges, holes are drilled or ears (loops) are welded under the studs Ф8 - Ф10 mm. In this case, the studs are pre-fixed to the ceiling. All that remains is to connect all the elements by raising the umbrella to the desired height.
  • Mounting on support frames. They are initially welded based on the dimensions of the lower part of the dome (its cross-section). It is advisable to make stainless steel frames. The finished frame is installed on the floor, securely fixed and then the exhaust hood is supported on it.

If you have doubts about your abilities when installing an exhaust dome, it is better to invite a specialist. The specialist will help with the selection of equipment, its installation and further maintenance.
